Chicken Chasseur
A lazy supper recipe, this takes just 10 minutes to prepare, then simmers to perfection in an hour and a half (leaving you plenty of time to chat over glass of wine!)

Ingredients
25g butter
3 rashers streaky bacon, diced
3 shallots, chopped
4 chicken breast portions
1 tablespoon tomato puree
225ml white wine
225ml chicken stock
285g whole button mushrooms
Fresh basil to serve
Method
1. Heat butter in a large frying pan. Fry bacon until crisp, about 3-4 minutes. Add the shallots and saute for 2-3 minutes.
2. Pan-sear the chicken portions, about 2-3 minutes per side. Stir in tomato puree, then add white wine
3. Pour in chicken stock and mushrooms. Lower heat and simmer gently, covered for 1 1/2 hours, stirring occasionally. Adjust seasoning and finish with the fresh basil before serving.
