Today celebrity chef Nigel Brown launches his new and exclusive recipe blog with a warming chicken salad.

Chicken is always a favourite - whatever season it is - and this dish is perfect for those busy week nights when you don't have much time but you still want a treat for tea.


Serves 4

Ingredients

4 small chicken breasts portions (skin on and bone removed)

4 slices of streaky bacon or pancetta, cut into lardons

1 mango peeled and thinly sliced

1 large courgette washed and peeled into ribbons

1 sprig of fresh lemon thyme

Method

Heat a thick bottom sauté pan and fry the lardons of streaky bacon first. Remove the bacon from the pan and keep it warm in your top oven.

Now saute the chicken portions in the same hot pan until the skin is golden brown and the chicken is cooked all the way through.

Place the chicken on a hot plate to one side while you use the same pan to quickly cook the courgette and mango using a little rapeseed oil if required.

Now assemble your dish finishing with a sprinkle of the fresh lemon thyme and serve.
