Bonfire Night Catherine Wheels

Ingredients (makes 12):
• Primula Cheese with Ham
• 1 sheet of ready-rolled puff pastry
• Flour for dusting
• 1 each of small red, green & yellow peppers

1. Preheat the oven to 200˚C / 400˚F.

2. Line a 20 x 30cm baking tray with baking parchment.

3. Core the peppers and chop each one into a fine dice.

4. Unroll the pastry sheet, keeping the paper. Dust each side of the pastry lightly, place back on its paper, and roll out lengthways until the pastry is the same length as the paper.

5. Spread the Primula Cheese over the pastry sheet, then sprinkle liberally with peppers, making sure to cover the pastry all the way up the edges.

6. Place the pastry with the short end facing you, and roll up carefully, as you would for a Swiss roll.

7. Transfer pastry roll to a tray or board lined with baking paper, and place in the freezer for 20 minutes to firm up.

8. Carefully slice the pastry roll into 1cm rounds. Don't cut your rounds too thick, or they will not bake evenly

10. Place the rounds on the lined baking tray and put in a pre-heated oven for 15-20 minutes.

Stuffed Sweet Potato

Perfect for autumnal evenings or bonfire night celebrations, these speedy snacks can be prepared in advance, meaning you won't miss out on the fireworks.

• 1 150g tube of Primula with Chives
• Crispy bacon
• Olive oil

2. Prick the skins of the sweet potatoes all over with a fork and rub with a small amount of olive oil.

3. Place potatoes on a baking tray and bake in the oven for about 45 minutes or until tender.

4. Towards the end of the cooking time, preheat the grill to hot.

5. Place your bacon strips under the grill and cook till crispy.

6. Remove potatoes from the oven and leave to cool for a few minutes.

7. When baked, cut the sweet potatoes in half lengthways and keeping the skins intact, scoop the flesh from the sweet potatoes into a bowl.

8. Add your Primula with Chives to the removed sweet potato and mix.

9. Stuff your cheesy mixture into the skins.

20. Add crispy bacon and chopped chives and serve.
