Recipes: Healthy pancake day

Vegan Pancakes

Vegan-pancakes

Ingredients 
150g whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
200ml of almond milk
1 tablespoon maple syrup, plus more for serving (optional)
Coconut Oil to cook with

Method 
1. Sift the flour, baking powder and salt into a large mixing bowl.
2. Make a well in the middle and slowly whisk in the milk – checking the consistency
3. Tip! If you can wait – pop the batter in the fridge for half an hour – this really helps!
4. Heat a wide non stick frying pan over a medium heat and add a little oil.
5. Cook the pancakes in batches by dropping about a
6. tablespoon of batter for each pancake into the pan.
7. Cook for about 3 minutes on each side until golden.
8. Transfer the pancakes to a warm plate and cover to keep warm
9. Cover in blueberries and Clarks Maple Syrup

Pancakes with Raspberries, Yogurt, Maple and Flaxseed sprinkles

Ingredients
200g self raising flour
1 teaspoon baking powder
Pinch of salt
1 large egg
200 ml milk
1 teaspoon melted butter
Coconut or Olive Oil for frying

To Serve
Raspberries
Greek Yogurt
Seeds/Nuts of your choice (we used flaxseed mix)
Clarks Maple Syrup

Method
1. Sift the flour, baking powder and salt into a large mixing bowl.
2. Make a well in the middle and slowly whisk in the milk and egg.
3. Add the melted butter and stir
4. Tip! If you can wait – pop the batter in the fridge for half an hour – this really helps!
5. Heat a wide non stick frying pan over a medium heat and add a little oil.
6. Tip 2! Make sure you have a good pan – any old frying pan just won't do, you need something with a heavy bottom to cook the pancakes evenly. It also means less oil is needed to coat the pan and prevent sticking
7. Cook the pancakes in batches by dropping about a tablespoon of batter for each pancake into the pan.
8. Cook for about 3 minutes on each side until golden.
9. Transfer the pancakes to a warm plate and cover to keep warm.
