Easy Elderflower

The elderflower harvest is now upon us so why not celebrate by getting creative in the kitchen?

Elderflower Cordial

A refreshing drink just with water. For an elderflower spritzer, just add sparkling water.


For every two pints of water:

  • 2 organic lemons
  • 75g citric acid (available from chemists)
  • 20 elderflower heads
  • 4lbs organic granulated sugar


1. Boil the water, dissolve the sugar and stir in the citric acid.

2. Slice the lemons thinly and add to the syrupy water. Add the elderflower heads.

3. Leave covered in a cool place to steep for 48 hours.

4. Strain through muslin and put into sterilised bottles.



Elderflower fritters

Elderflower fritters with yogurt and lime


For the yogurt:

  • 300ml organic Greek yogurt
  • 1tbsp icing sugar
  • 1 lime juiced and zested
  • Half vanilla pod, de-seeded

For the batter:

  • 450g fine flour
  • 1 bottle of organic larger (330ml)
  • Enough sparkling water to make a slack paste (500ml)
  • 25g fresh yeast
  • 4tbsp caster sugar
  • 6-8 heads of elderflower on stalks


1. Mix all the yogurt ingredients together and reserve

2. Make up the batter and set aside

3. Pick over the inside of the elderflower heads and remove any insects. Lightly flour and dip into the batter. Deep fry for 2-3mins at 175C until golden

4. Sprinkle with caster sugar and serve immediately with the lime yogurt
